Experience Overview

This signature experience combines three pillars of Japanese cultural refinement: cha-kaiseki, the traditional cuisine served before tea, kodo, the art of appreciating fragrance and sado, the tea ceremony itself. Guests will enjoy a beautifully prepared seasonal kaiseki meal, learn the etiquette of dining, purify the mind through incense, and receive hands-on guidance in whisking and drinking matcha. Perfect for travelers seeking a deep, ceremonial understanding of Japanese hospitality.

What is Cha-Kaiseki?
Cha-kaiseki is the traditional multi-course meal served before a formal Japanese tea ceremony. It is not simply “Japanese fine dining,” but a culinary expression of the spirit of tea—a way of welcoming guests with sincerity, seasonality, and elegant restraint. Rooted in the philosophy of wabi-sabi and perfected by tea masters such as Sen no Rikyū, cha-kaiseki represents one of the highest forms of Japanese hospitality. At its heart, cha-kaiseki is built on three ideas: seasonal ingredients, beautiful simplicity, and warm, thoughtful service.
Each dish is crafted to highlight the pure natural flavors of the season. Rather than using heavy seasoning or elaborate techniques, the dishes emphasize balance and harmony. A cha-kaiseki meal usually includes rice, soup, several small dishes, and a final light course to prepare the palate for matcha.

What Is a Kodo ?
Kodo, often translated as the Way of Incense, is a traditional Japanese art in which participants “listen” to the fragrance of aromatic wood. Rather than simply smelling the scent, guests focus their attention and senses, appreciating how the fragrance unfolds quietly in the mind. Historically practiced by aristocrats and samurai, kodo emphasizes elegance, mindfulness, and refined sensitivity. In a typical kodo experience, guests learn about the origins of incense culture, the different types of fragrant woods, and the proper handling of incense tools. They then “listen” to one carefully prepared incense piece, allowing the subtle aroma to guide the mind into a calm, reflective state. Kodo is rarely offered in modern Japan, making it a unique and memorable cultural experience for international visitors seeking a deeper connection to Japanese aesthetics.

About Suzuoki

Suzuoki is a refined culinary house in Kanazawa, known for its beautifully crafted kaiseki cuisine and its deep connection to the traditions of tea culture. Rooted in seasonality and simplicity, each dish highlights the natural flavors of carefully selected local ingredients. The serene interior—designed in classic sukiya style—offers an atmosphere where guests can appreciate the quiet elegance of Japanese aesthetics. In addition to kaiseki dining, Suzuoki preserves cultural practices such as tea ceremony and incense appreciation, allowing visitors to experience the essence of Japanese hospitality. With warm, attentive service and an intimate setting, Suzuoki provides a rare opportunity for international guests to encounter the authentic spirit of Japan.

Chef Suzuoki

The second-generation host of Suzuoki carries forward the refined spirit of kaiseki cuisine and the aesthetic principles of the tea ceremony, while shaping them into a form that resonates with modern guests. With a deep respect for balance and restraint, he selects ingredients, tableware, and room arrangements with meticulous care, allowing the beauty of each season to be expressed through both food and atmosphere. From a young age, he has been immersed in the worlds of tea ceremony and incense appreciation, studying the role of cha-kaiseki within a formal tea gathering and the philosophy of ichigo ichie—the idea that every encounter is unique and unrepeatable. This training influences not only his culinary approach but also the way he interacts with guests, creating a calm and welcoming presence. His ability to explain cultural nuances in a clear and thoughtful manner has earned him strong trust from international travelers and travel professionals alike. Rather than simply preserving tradition, he continues to explore new forms of expression within it. Guided by sincerity and quiet dedication, he strives to ensure that every moment at Suzuoki becomes a meaningful and memorable experience for each guest.
